Depends on the tester. Official word is it needs to be a competition car to pass with full harness/buckets etc
Interesting Jamie, only car of this ilk that I have put through an MoT and driven on the road is my Porsche 944 S2 race car, doesn't even have headlights and was marked as daytime running only. Obviously no 3 point belts or interior as it is/was a MSA compliant circuit racing car but with heater, handbrake, horn, front and rear lights and indicators to pass MoT. Always had that car insured with REIS as a competition car (like rally cars). Fully comp limited to 6k miles PA cost me £260 last renewal which includes 4 track days + extra days at 0.5% of the agreed value. Annoyingly it cost me less to insure than the Meg.
There is a thing on the MOT testers screen that is linked to DVLA, that they can click a button to indicate it is a track/race car, this then allows the car with bucket seats and harnesses to have the airbag light on or the bags to be removed altogether, as for the insurance i went to Green Light told them about all the modifications and they were happy to cover me and it worked out cheaper than Admiral without the mods
